Water Stones for Knife Sharpening — How to Choose?

Water stones are a special abrasive material used for sharpening and polishing knife blades. They are called water stones because water is required for use, serving as a lubricant and preventing blade damage. Their design is simple to use, convenient for storage, and suitable for long-term transport.

Pros and Cons

Water stones for knife sharpening may have different grits, allowing you to choose the most suitable stone for a specific type of knife and task. Typically, they have two surfaces — coarse and fine — which allows you to first remove defects from the blade and then bring it to a perfect edge. The higher the grit value, the more specialized cases the tool can be used for. Water stones for knife sharpening can be selected and purchased from the OsakaHamono online store.

However, knife sharpening tools also have drawbacks. These are especially noticeable when the material is natural. First — high cost, often higher than abrasive rods. Also, natural stones tend to wear down over time, and improper use can result in uneven sharpening.

Methods of Use

Today there are several ways to effectively use stones for hand sharpening and polishing knives and preparing other tools. The most common methods include:

  • Single-sided sharpening: the stone is placed on a wet cloth or a special stand to prevent slipping on the work surface. Start with a coarse-grit stone, then gradually move to a finer-grit stone. Hold the knife at a 20-30 degree angle to the stone surface and move the blade across the stone away from yourself.

  • Double-sided sharpening: the tool is sharpened on both sides. First, prepare one side on a coarse-grit stone, then turn the knife and sharpen the other side on the stone with the same grit. Afterward, repeat the procedure on finer-grit stones.

  • Sharpening with carbon paste: for a sharper and smoother edge, carbon paste can be applied to the knife edge. When preparing the tool on the stone, first sharpen on a coarse-grit stone, then apply carbon paste to the edge and sharpen it on a finer-grit stone.
