The kiritsuki santoku knife can be used for slicing and shredding beef, pork and salmon fillets. It has a beveled edge that resembles the tip of a sword or dagger. Its wide blade is used as an auxiliary tool, for example, to crush garlic cloves or transfer pieces of chopped vegetables to a frying pan.

Seki Kanetsugu, a well-known knife manufacturer, was founded over a hundred years ago in 1918 by Matsujiro Kawamura, a descendant of Kanetsugu, a master swordsman who began making swords in 1345. The Kawamura family, consisting of three generations, dedicated themselves to the development of a workshop that is true to the name of Kanetsugu. They have combined traditional Seki knife-making methods with innovative technologies such as the "zero temperature process", resulting in Seki Kanetsugu becoming the leading knife manufacturer in Japan. *Proper care of these knives includes washing and drying with a soft sponge, and safe storage after use. It is important to avoid cutting frozen foods, hard fruit pits or bones. The recommended cutting surface is wood, rubberized boards, high-quality composite materials or high-quality plastics such as polyethylene, which will help protect and lengthen the knife blade. It is extremely important to avoid using glass, metal, countertops or other hard, inflexible surfaces. For optimum results, we recommend sharpening these high-quality Japanese knives on a grindstone.
