The originality of Japanese cuisine and the perfected skills of its chefs have led to the creation of unique recipes and entire systems of food processing using traditional tools. Among these is the Nakiri, a knife for herbs and vegetables, which is used for slicing and shredding soft and vegetable products.

Features of Japanese Nakiri knives

Nakiri knife (Nakiri) is the Japanese version of the kitchen axe. Thanks to such a solution, it is well-balanced and convenient enough for chopping and mincing small vegetables, without causing the need for additional hand movement to roll the blade along the cutting board.

Visually, it resembles the Usuba knife, but its blade has reduced dimensions for convenience, as well as less weight - a few hundred grams depending on the manufacturing material chosen. This allows it to be more comfortable and compact, more functional in application.

The Nakiri slicing and shredding knife has the following key features:

  • The Nakiri blade has a rectangular blade, which can be up to six centimeters wide and up to 18.5 cm or more in length.

  • The distinctive feature is the sharp tip, which can be situationally either upturned or lowered in line with the cutting blade.

  • The cutting edge of the blade has the highest level of sharpness, and is also higher in density, hardness and durability - from 57 Rockwell points.

  • The finish sharpening has a minimum angle of inclination, created on water stones with a higher level of grit.

This makes it impossible to confuse Japanese Nakiri for chopping and slicing with other cutting tools in Asian, and even more so in European cuisine. The unique shape of the blade, suitable for chopping vegetables and shredding herbs, allows Nakiri to acquire the characteristic features that distinguish it from a filet knife or a chef's knife.

What a Nakiri knife is for

Japanese knives for chopping and slicing found their place not only in professional kitchens, restaurants and other catering establishments in Asia, but also in Ukraine and other European countries as well. Chefs tend to buy it for easier processing of soft, moderately solid foods, among which different kinds of vegetables and fruits prevail.
