Description:
A large number of different sharpeners are available on the market today for knives that allow you to qualitatively correct and sharpen the cutting edge of the blade in compliance with the angle set by the manufacturer. But most models have rather bulky dimensions and considerable weight, so they require a flat table for work, on which they need to be fixed.
Features of the model:
The American company DMT (Diamond Machining Technology) presented an inexpensive variant of the Aligner™ Deluxe sharpener, which is suitable for sharpening all types of knives, including serration . The Aligner™ Deluxe kit includes: a blade clamp with devices that allow you to set the desired angle for sharpening, three four-inch Whetstone™ diamond whetstones in coarse (45 µm grit size, 325 mesh), fine (25 µm grit size, 600 mesh) and extra-fine (grain size 9 microns, 1200 mesh), a folding bar with a platform for attaching bars, a bar with a diamond cone for sharpening the serretor and a cover made of dense fabric for storing the set.
This model allows you not only to support knives in perfect condition, but also to restore the correct cutting wedge in "started" knives.
Sharpening technology:
To restore the cutting wedge and sharpen the knife with the help of the Aligner™ Deluxe set:
- fix a diamond sharpening stone coarse (blue ) in the Rod;
- set the necessary sharpening angle on the device on both sides, most often it is 20°;
- fix the knife in the device (preferably in the middle of the blade);
- insert the metal pin of the rod into the hole of the device;
- put the whetstone in the base of the blade from the side of the handle;
- holding the device in a hanging position, move the diamond whetstone simultaneously in two directions - towards the butt and towards the point.
After 4-5 movements with the whetstone turn the device over with a stone and do the same operations with the other side of the blade. After restoring the cutting wedge, we change the whetstone to fine (red) and perform the operations described above. For lovers of perfectly polished knives, you can use an extra-fine diamond whetstone (green color).
To sharpen the serretor blade, take a rod with a conical whetstone, set the required angle on the device and, not pressing too hard, start moving towards the butt of the blade first in wide grooves, then in narrow ones. After you have sharpened all the notches of the serretor, run a whetstone a couple of times on the opposite side of the blade to remove the burr.
