The AISI 420 steel kitchen knife is one of the most popular cooking tools for beginners and chefs throughout Europe. And it's all down to the raw material, which has proven itself to be relatively inexpensive, yet of high quality workmanship.

Kitchen knives made of AISI 420 steel and their advantages

Steel AISI 420 is in the top three most popular materials for the production of inexpensive knives for the kitchen. The whole point is that it has a low carbon content, so it is resistant to rust formation, which allows you to use it without proper maintenance.

Kitchen knives made of AISI 420 steel have these advantages:

A high level of resistance to the formation of rust and corrosion, which allows for wider use of the knife in wet areas.
Low price relative to other types of stainless steel, which makes blades made of it more affordable.
Increased degree of elasticity, which reduces the possibility of fracture of the blade in case of increased mechanical stress.
Lightness and thinness of finished knife blades, which reduces their specific weight and reduces the load on the chef's hand.
It is worth noting that to order in Ukraine such a knife for a novice chef - quite favourable. It is moderately soft compared to other tools made of more expensive materials. However, faster than the others are dull, because of which you will need to buy also quality sharpening tools.

What is in the composition of kitchen knives made of AISI 420 steel?

The chemical composition of this material depends directly on the country of production. For example, Chinese and Indian analogues have less quality components, which makes them not as desirable as German, Japanese and Finnish variants.

Knives made from AISI 420 steel have the following chemical composition:

- Carbon: less than 0.5%, which helps add the necessary level of strength;
- Chromium: more than 13%, which makes the material not susceptible to corrosion;
- Tungsten: less than 1%, which is used to alloy the steel;
- Molybdenum: less than 0.8%, which increases resistance to rust;
- Vanadium: up to 0.2%, which makes the material more resistant to corrosion.

Another feature of the production of such steel is heat treatment. In this case, a compound such as nitrogen is used. As a result of its influence it is possible to achieve a higher level of strength - over 53 HRC, as well as significantly increase cutting properties.
