Neither home nor restaurant kitchen can be imagined without knives - the main tools of every chef. But in addition to selecting a cutting tool it is necessary to take care of maintaining the quality of its cut. What is a moussate and why it is needed

A musate is a tool that is used to bring a kitchen knife to the desired level of sharpness or smoothness of the blade. It is a rod, which has a convenient for holding the handle, which is made of fine or coarse abrasive material.
A classic sharpening tool has an ergonomic handle, a rod made of various kinds of materials. The handle is large and tight, but with minimal weight for easy holding of the tool, and the rod can be 17 to 30 cm or more in length. Some models also contain a stop between the handle and the sharpening edge, which simplifies application and minimizes finger slipping on the rod.
It is important to understand that a mousate is not always used to sharpen a knife and bring it back to a sharp cut. Most modern tools are designed to level the cutting edge if it is deformed. Therefore, the main application of the tool is so called honing, i.e. dressing and finishing of the blade.
Deburring is used to reduce sharpening cycles, which remove metal layer by layer, thus accelerating tool wear. The cutting edge can become deformed and crumpled after handling hard foods or coming into contact with cutting boards. To restore the tool to its former geometry and to reinforce its edge, the tool is honed with a musat.

Actual kinds of blades

First of all, it is worth noting the shape of the mousata, which more often can be round or oval. Rounded types of rod are the most common for sharpening chef knives, because they have less weight, and also - a larger contact surface, which simplifies the work with them.
There are quite a few musats, and they are divided into the following two subcategories:

  1. By material: the most popular are ceramic and diamond moussats for the kitchen. Ceramic has a higher hardness than knife steel, which allows for a fine, finishing finish on the blade. Diamond versions have a stem coated with a diamond spray. Such material is superior to the steel on the knife in hardness, and therefore can eliminate even minor damage on the blade.
  2. According to abrasiveness: they are divided into three main groups - coarse, medium and for finishing. The first category includes moussats up to 800 grits, which are used for very blunt knives. Medium products have up to 2,000 grit, creating a small cutting surface. And models with an abrasiveness of more than 2000 grits allow you to smooth out a bent blade edge.

Combination products for sharpening knives are less common. For example, with additional notches, with a metal rod and ceramic coating and not only.
