Japanese knife santoku and its characteristics
Santoku knife relatively recently became popular in Europe, while occupying a leading place among cutting tools on the territory of Japan - its homeland. The name can be translated from Japanese as "three good things", and this allows you to understand how the knife is most often used - for chopping, cutting and chopping all the ingredients in the kitchen.
It has a unique design - the shank and handle are located on the same cavity, and the knife has the so-called "ram's paw" shape. It is also distinguished by the presence of a slightly raised, curved and rounded tip relative to the entire cavity of the blade. Its handle is straight, rounded and narrow, it has a lot of weight, which makes it possible to use it instead of the kitchen axe.
What you can use Japanese santoku knives for:
-
Slicing: the santoku knife can be used to quickly cut into small and thin slices, slices or bars;
-
Chopping: the sharpness of the blade allows you to chop not only vegetables into slices, but also meat products into strips or circles;
-
Shredding: santoku has a specific tip, which allows it to chop fish, fillets, herbs and already cooked dishes more easily;
-
Softening: you can replace the kitchen hammer with the shank of this tool by tapping it along the meat or fish;
-
Peeling: the oblique part of the shank is suitable for peeling seeds and cores out of fruits and vegetables, such as melons and peppers.
Because Santoku knives are specially shaped, they do not require "rolling" across the surface of the cutting board to finish the food. The weight and length of the cutting edge, its sharpness is enough not to make unnecessary movements, and also not to squeeze the food, damaging its texture.
Some models available for purchase have shallow dimples along the blade. These santoku knife models trap air as they cut, avoiding the nuisance of wet ingredients sticking to their surface.
The difference between Japanese santoku knives and chef models
In addition to santoku knives, in the section of universal cutting products for the kitchen belongs to the so-called chef's knife. But what are the differences between them?
A chef's knife has a slightly different shape. It has a sharp end, a straight, sometimes oblique shank, with the blade starting to curve towards the end. The heel of the chef's blade is thicker, designed to support the index finger. The Japanese version has a rounded tip, a sharp heel area, and a solid blade for easy slicing and chopping.
The Santoku knife and the chef's knife also have differences in size. The Japanese version can have the size of the cutting edge up to twenty centimeters, while the classic European version - from fifteen centimeters and more.
