Japanese water stone King is produced by Matsunaga, a company located in Osaka, Japan. Matsunaga is one of the oldest manufacturers of sharpened stones in Japan and, in addition to the King brand, also produces bars with the name Sun Tiger. King and Sun Tiger stones are widely known in the Western market, as they have been present there for a long time, and they were among the first sharpening stones exported from Japan abroad.
King stones are made using classical technology and occupy a niche of the most budget-friendly sharpening stones in Japan. However, these stones cover most of the needs of the chef's market in Japan. The price-performance ratio of these stones is attractive. They are relatively soft in terms of binding and pleasant to use in terms of tactile response, you can see and feel how the stone cuts the surface. However, this type of soft stone needs to be leveled relatively frequently, a process that is carried out either on special platforms or on glass using silicon carbide powder.
The 1000 grit stone belongs to the main stage of sharpening and performs the bulk of the work on the final formation of the geometry of the lead and cutting edge after the grinding stage. The 1000 grit stone is included in any sharpening set for all cutting tools and applications. The stone should be soaked for 2-3 minutes before any use (sharpening or leveling).
